Tomato Bruschetta


This is one of my favourites and I'm going to make the recipe for just two people instead of assuming a party:

2 large tomatoes or 4 small or Roma tomatoes (diced)
Garlic Powder or finely minced fresh garlic
Olive Oil
Balsamic Vinegar
Salt
Pepper
Fresh basil
Parmesan
butter (optional)
Loaf of Italian Bread or Alessi toast


Directions:
Dice tomatoes and put in a medium sized bowl. Pour in Olive Oil to coat tomatoes and add two dashes of balsamic to the bowl and stir. Add salt, pepper and garlic powder/fresh garlic to taste. Dice basil into small pieces and add to bowl. Let marinade while the rest is being prepared (can be refrigerated). Slice the loaf of bread about 1" thick and coat with butter and toast in oven til crispy and brown or remove the Alessi toast from package and arrange on a plate. Top with the tomato mixture, garnish with a sprig of basil and Parmesan.

Commence Cooking
